I have many subjects on my intranet, and each subject will have many nodes, e.g., HR, IT, Newsletters, Calendars, etc.

Would it be best to have many Content Types or fewer content types and add a field that has a drop-down list of categories from a taxonomy list?

based on what you've written, I'd use taxonomy or a text field to distinguish the content. However, the devil is always in the details.
