Steps to reproduce:
- Create an entity type and bundle.
- Add at least one piece of content to your new bundle.
- Go to the "Add view" page and select your created entity type under "view preferences".
- Set "Show" to "fields" and add a "type" field.
- Save your view.
- Look at it with and without the "Administer ECK entity bundles" permission.
You 'll now see that the type field disappears after unsetting the "Administer ECK entity bundles" permission.

I just had the same issue and it's a permissions issue. If you give the editors permission to Administer ECK entities and Administer ECK entity bundles will make the Type of the bundle appear but it won't give them the chance of editing entity types. I've attached a screenshot of my permission too.
