My webform is sending from the "admin" address for my site. I have set this to send from the user input value for the email. When I review the "results" of submissions the email address shows the admin value. I have spent hours researching this issue and have had no positive results. Am I missing something or is the a random but known issue?

Support requests are never critical, by definition.
You also don't seemed to have searched the issue queue much:

If you don't want webform's protection against anti-spam filters, disable it in the global webform config.

When anyone fills out the contact us webform it asks Name, Email, Message and reason for contact. All are required fields. Upon being submitted it is not saving the email address input by the person submitting the form. When the notification is sent to my email address it is showing from me to me and there is no user input email address saved anywhere.
