I cant help it but it seems I cant define custom metatags per node, only global defaults?

You need to to add a Metatag field to the content types (or other entity bundles) that you want to be able to override on a per-object (e.g. node) basis.

I know, in #2795983 we're going to try to work out how to make it easier to manage.
