Currently, it is only possible to specify a unique encryption name when editing a site. However, when creating a new site that should have encryption enabled, it is not possible to specify a name. Instead, the domain name is automatically used.
Setting to Feature Request, since I'm not sure if this handling is intended.

NWOM CreditAttribution: NWOM commentedThis appears to be a bug, and the workaround is to choose enabled, and then go back to disabled, and then enabled again.
After switching back to Enabled the second time, the "New encryption key" field is shown.
