Is it possible to see what categories an archived mass contact message was sent too? If not, then perhaps this should be a feature request.

I'm guessing this is no longer necessary, but I'll answer it anyway.
Yes, the category is saved. It is stored as a field on the node, and so what ever you use to display fields on content should also work for categories on Mass Contact messages.
