Panelizer allows you to override the display per entity, which is great.
In the IPE, you then can revert to the default configuration. While this is great functionality, it's also very breaking as it doesn't ask you for confirmation and you end up loosing any configuration you have just done, which can be painful :)

Having just experienced this issue, I can agree, totally painful. Drupal core normally follows this pattern too (e.g. deleting a node).
