IEF comes with two form widgets, Simple and Complex. Both widgets allow their single and plural labels to be configured in the form widget settings. However, since the simple widget does not display labels, it does not need this configuration.

Please check the issue I posted: https://www.drupal.org/node/2882644.
So my point is about the configuration was designed to override label in the widget in the form. At some point that was not working properly.

This issue has the right idea, but the patch doesn't pass testing.
