I have the exact same issue with my Drupal 8 installation on updating the node/XXX (I also gave update permissions to anonymous users, but no luck). Have this issue been resolved somehow?

#2558883: Improve DX of formats that are requested but not found, #2417917: Include content type format name in error response, #2659070: REST requests without Content-Type header: unhelpful response significantly hinders DX, should receive a 415 response and others ensure there are much better REST error responses now. Without more concrete information, we can't help you either. So, closing this.
