It might be that I'm a total slacker and I end up skipping Drupal 6 entirely. It'd be nice to be able to see how my site's modules are doing for Drupal 7 as well.
A simple select box that contains core versions > the current one would suffice.

webchickOk, this needs a bit of work, but it seems to work!
1. I'm hard-coding the list of available core versions. I'm not sure how to generate this dynamically.
2. There is a LONG delay when you submit the form, because it has to re-build the project data for the version you select. I'm not sure how to get around this, though.
