It seems the without filter isn't functioning properly. I originally tried it on a ECK entity template, and then on a default node template, and the fields passed to without still printed.

Without filter definitely works in general, there are automated tests for it.

That must have been user error, because I am able to get without() working with nodes, just not eck entities. I'll move the issue there, without seems to be working as intended with provided core entities.
