Display one image result from each taxonomy?

Hi, hoping someone can help me please as my brain has been fried by google searches! =)

What I am trying to achieve is a block menu of the first single taxonomy image linking to a view of all of those taxonomy terms (in a gallery)

I have a taxonomy of

Services
-service1
-service2
-service3
-service4
-service5
-service6
-service7
-service8

For each of these sub taxonomies i have a view with a gallery of 9 images and some text above in an EVA field. They are grouped by taxonomy tagging (all working fine)

I would like to create a nice image menu on the front page with the first of these images from each sub taxonomy linking to the gallery for that taxonomy?

Issues are:
1 / I cant seem to limit the number of displayed nodes (images within each taxonomy) to display one of each only?
2 / How do I link the first image in the menu to that correct taxonomy gallery 'page' for that service?

I have some experiences of Views but lots of the searches I have done the replies seem out of date for D7 / current version of views?

Perhaps my terminology is out a bit but i keep searching to no avail?
