I've added a hidden field into the form (Type:hidden on the webform "Form components" page). The hidden field has a value and (as predicted) it is not shown on the form when a user input data. The form is multipage with a "preview" button at the end (enabled preview page).
On the preview page the value of the hidden field is shown to a user.
It works like this for both Hidden types: Secure value and Hidden element.

Fyi you can choose which fields show on the preview page via Webform -> Form settings -> Preview page -> Included preview values.

(I took the liberty of closing the issue - my apologies if this is bad etiquette!)
