Hi,
This module seems to be very interesting. I'v installed the module and created an option set.
Now I try to define options in this option set but I don't find where I can do that !
I find this page : admin/commerce/orders/options/add
But it show the error message "Adding an option through the UI is currently not supported."
What am I doing wrong ?

Take a look at this comment. Basically you need to create your options as a taxonomy and then add that taxonomy field to your option set. E.g. you could create a size vocabulary and a colour vocabulary and then add these to your option set. You can then attach this option set to your product (you need to add an option set field to your product).
