This is a great module, but struggling with one aspect. If a user doesn't fill this field out, is it possible to default the field to display to the system Username?

Yep. Just configure the field on the user entity.

/admin/config/people/accounts/fields/field_NAME

Make it optional and check "Use this field to override the users login name?"
