I can't seem to have different settings for different og_group_refs.. Is there a work around for this?

I need one content type to have unlimited while another has 1.

Currently, you need to have two separate OG audience fields because the OG settings are stored in the field base (not the field instance) - one for each of those use cases. For example, og_group_ref and og_group_ref_unlimited.
