It's now under "admin/commerce/config/store", it should be under "admin/commerce/stores". The "Store information" menu link (commerce_store.links.menu.yml) should be renamed to "Stores".

Aside from the yaml fiels, we need to update the commerce_stores view, and the annotations on the Store entity.

At the same time, the store types UI should move from admin/commerce/config/store/types to admin/commerce/config/store-types.
