On admin/store/reports/coupon/%/%/completed, report use gmmktime() function which create GMT timestamp instead of using mktime() which creates server time zone timestamp. Attached are patches for 6.x and 7.x versions.

Fixed for me as well. Dates kept jumping back a day every time the form was submitted.
