I need a possibility to book multiple single days (noncontinuous).
Would it be possible with this module? Any recommended approach to this?

Well, this is indeed not foreseen and also not planned as a feature, at least not for D7 anymore.

The edit form, does allow for multiple ranges to be selected (but not explicitly displayed). So to get this, you would need to develop some custom code based on the booklet form with the single day option enabled and the edit screen with multi-range selection.
