On the 7.x-dev branch the path admin/structure/demo/manage seems to go to the snapshots list view.

I'm wondering where the settings are to have demo reset a snapshot on cron.

Anyone able to help?

Very long time, you must have figured it by now. Just go to admin/structure/demo/settings, set default snapshot, interval and your website will be restored to that snapshot.
