I've created a content type "US States" consisting of (A) Title holding the US State name, and, two extra fields: (1) abbreviation, (2) state flower

Using Entity reference and Manage Form display, I can get the user to select from the list of US States.

But I want to display the corresponding state abbreviation, and state flower, as separate fields elsewhere. Option to do this in Manage Display seem to be missing.

I don't exactly get what you're trying todo here ? Can't you just display through entity reference and select an exact view mode ?

I would suggest to use a module such as country or, depending on the scope, address
