I'm trying to understand what this module does. I have colorbox already installed, which already had a field formatter, and after installing this module nothing seemed to change. No additional option. Doesn't seem to be anything added to the colorbox settings page either?

The field formatter of the colorbox module is for images only. This module here supports text and computed fields and comes with some specific options for those field types.
