If we get a reservation, we don't know, at which of our locations the table is needed.

I believe the demo contains a setup for multiple locations? But I never checked if that had any different content type for reservations.

In any even you should be able to add a field in the content type called reservations, specify what type and the values within, plus type of field, i.e. radio buttons drop down etc.
