another drupal dev and i were pondering over the pros and cons of which instance to fire up in AWS for drupal sites ... centos or ubuntu? was wondering what the community thought here? should i just pick the OS i am more familiar with?

Of course the same problem comes with every host where you install your own OS. For smaller projects AWS is to complicated (and expensive) but I have the same question every time I set up a Linode.
Ubuntu (other than LTS support) has way to many dist. upgrades. Ubuntu LTS or Debian or Centos are all fine (Centos if you want cPanel). On Debian if you want Apache 2.4 or the very latest php and mysql from the package manager you may have to set your repositories to 'testing' at least long enough to grab these versions with apt-get update. Really what you are used to is best.
