say a user enters a date of birth 16 January 1990

I would like to have two choices of how the DOB is displayed:

eg 16 January (day & month) or 16 January 1990 (day, month & year)

Sorry to be really slow getting to this, but you can already do this. The date has several optional displays that you can set up any way you want. In this case you might want to create a short format for the day and month only.
