I use image styles to determine the size of particular media.

How can I use them on the media-gallery/detail page?

Alter the display settings for the Image file type, not the field or content type. You'll see new View Modes appear after enabling `media_gallery`, for example admin/structure/file-types/manage/image/display/media_gallery_thumbnail
