I tried http://www.commercialprogression.com/post/how-remove-tabledrag-rearrangi..., which works fine for normal fields, but the theme function isnt called for FC multiplvalue fields it seems. Is there any way to do this?

It seems like overkill to me. Maybe you can hide them with CSS for the same effect. It should also be possible to remove the _weight element inside a form_alter hook.

Solutions involving customizing the templates should be possible once #1157794: Move markup to template files and improve theming in new 2.x branch is resolved.
