1. I would like to upgrade to D7, but my current D6 site has some subdomains which are only accessible through Symlinks. I find them very confusing. Do I just dump the database and load it back into the new version or should I do something special?
2. Are subdomains possible at all without Symlinks, what should I ask from my new host?

1) the upgrade and the symlinks aren't dependent on each other. You do not dump the DB and load it into D7. Upgrades require upgrading the database as well as the files. I suggest reading the UPGRADE.txt file in Drupal 7 for more information.
2) What you should ask of your host is the question you asked here. Your host knowledge base / documentation should have documents on how to setup subdomains within their environment.
