I've attache a makemeeting field to a content type of my site, but this content type is used for several things, and it doesn't always need a poll attached to it.
Now when I create a node of this content type at least an option in the poll is required. Would it be possible to start with 0 options and then, if needed, add them?

Yup, but I think for a better UX that you will have to remove the first line as the probability of not creating a poll will be lower.

I have the same problem. The easiest solution seems to remove the line.
