Fields of a single type are sorted alphabetically by title in columns and cannot be rearranged non-alphabetically.
Sorting fields should be more flexible, and I'm really hoping this isn't by design. Assuming this is a feature request and not a bug, but starting it off as a support request just in case I overlooked a setting/workaround. I found this behavior in 7.x-1.4 through 7.x-1.7 as well as 7.x-1.x-dev.
