I would like to remove the lightbox option for my users when creating a new gallery. I want the galleries to look more alike and also the lightbox is not working properly: the description is not showing in lightbox, using Colorbox. (created a different issue for that)

media_gallery does not have any feature, to hide settings and set defaults.

This seems to be more like this: #1053674: Integrate with colorbox module and #1311568: Integration with other lightbox alternatives. Wouldn't you say Moloc, that this can be closed as a duplicate of one of those issues?

Moloc, the issue you suggested would probably be the one to solve my issue. I will try it when I have the time - have not created a module yet, but the instructions look very good.
