Produce a PDF from a single node and CCK fields

We have the need to produce a PDF based on a Node with some CCK fields. One of the CCK fields is a Field Collection containing prices descriptions and additional notes per item ( I would think by now you have guessed it is an estimate or quote ). Of course the field collection would reference a product node to get most of the generic information.

There is a contention, here in our offices, that we can use Ubercart or Commerce to produce an invoice but label it as a quote/estimate. We would not want to have to provide a checkout to get to the final document. It is the sales people who are putting these together and sending them to the prospective customers.

Does anyone have a suggestion or some experience to add. We are most appreciative for any input.
