The width of the Academia theme is rather small by default. It would be nice if there was an option to let the width stretch to a percentage of the screen width, with a min-width and max-width defined.

Sorry, the css layout technique used in academia.theme doesn't allow for dynamic resizing according to browser width in a robust way. Doing so requires css features that older browsers (such as IE) don't support, or which would be prohibitively troublesome to maintain for.
