How can I override the default omega-text.css? Just placing a same named file in the css folder of the subtheme doesn't work. Should I mention in the .info file? How?

You are best advised to leave the CSS files in sites/all/themes/omega/omega/css alone and override any classes or ID's from those files in your other subtheme CSS files based on the display size as needed (subtheme-default.css, subthemes-default-normal.css, etc.)

Okay, thanks, with a bit more experimenting I'm starting to grasp the concepts behind the theme a bit better.
