How can I change block title from Subscribe to sitename.com to custom title? When I try to configure block and enter title into apropriate field, nothing happens. title is still the same. I use panels and its possible to override block title via panels, but it should not be necessary to do this this way or via theme functions.

Just the same as any other block, go to /admin/build/block and find the "Mailchimp Subscription Form" block, click on configure and you can set the title in there
