I would like to rearrange and customize Commerce 2 - Order information/Payment information form for my project. I'm trying to find some useful information/documentation how to do that, but with no luck at all. Any ideas or suggestions or links would be very helpful.

That is good questintion for me too. I am struggling with that also. Looks like it use feature called formPlugin, but this all what I get for now.

I'd be highly interested in that, too. For my project f.ex. it's not relevant to know where exactly my customers live as I'm going to make personal appointments with them regarding handing over the ordered products (where the payment is going to take place in cash, too) anyway (I only sell locally and many of them live somewhere in the portuguese campo without official address - so instead a field where they can enter geografical coordinates or set a mark to a location on a map would be much more meaningful for my case).
I'm using drupal 9.5.x at the moment btw.
