I am really just learning the whole GIT process, and while for the most part, I am getting the hang of it, I have found a question I could use some help on.
I have a site that I had started before I started with GIT, where I just installed D8 on the live server and went to work. Now, I'd like to clone it over to a repository on my MAMP server, so I can work on it there, and then push the completed changes to the live server.
Which is the better way to go at it? Should I start from my live server, and PUSH the site to the MAMP server, or should I start from the MAMP server, and CLONE the live server? (or does it make any difference at all?)

I'd do it in the latter and only push to staging or live.
Agreed
VM is right, clone the live server. And, if you have the chance set up a local dev environment using any one of the popular virtual machine options like Lando, Solo, Docker, Drupal VM or just set up a local stack. It makes local code changes much quicker. Now might be a good time to think about making your Drupal installation Composer based since this is all that will be allowed come Drupal 9. Check out this article by Jeff Geerling outlining how it can be done: https://www.jeffgeerling.com/blog/2018/converting-non-composer-drupal-co...
Best of luck with your new found Git skills.
