For some reason during my install it froze and when I hit refresh I was brought to this page to enter my username / password
when I read the INSTALL.txt file it says you are automatically logged in after the install.

There is no default. When installing you are directed through the forms to set up the 1st created account including userid, email and password.
Check your database manually, if UID1 isn't complete you can use MySQL to update the table with the necessary account information or delete the entire database and start over creating the 1st created user through the installation form.

without knowing what version of Drupal is being installed and what software is being used in environment it's difficult for anyone to help.

7.x-dev is for bug chasing and fixing. there are 275 pending bugs logged against that version. While under development it can be broken on any given day as it is patched and retested by developers.
MySQL 5 is a necessity for Drupal 7.x. I've not tried to install it in the past few weeks. You won't get much help for it in the forums as it isn't widely used by anyone other than those who are working on it for release.
If you are considering building/developing a site, I highly suggest Drupal 6.x as the version to build with.

7.x = buggy mainly because it is still under development at the time of this comment. There is no RC nor stable release of 7.x in the wild.
