Apply patch https://www.drupal.org/files/issues/mailchimp-unsubcribe-or-remove-2510714-3.patch. Provide an option on the MailChimp Subscription field to unsubscribe the subscriber instead of removing. The default value of this option remains "remove" as that is the current behavior.
